Gheimeh: A Delicious Iranian Dish

- 1/4 tsp. saffron threads, crushed and soaked in 1 tbsp. hot water
Instructions
- In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Add the diced onion and sauté until softened and lightly browned, about 5-7 minutes. Add the minced garlic and sauté for another minute.
- Add the diced meat (or lentils, if using) to the pot and cook until browned on all sides, about 5-7 minutes.
- Stir in the tomato paste, canned tomatoes, ground turmeric, cinnamon, nutmeg, cardamom, salt, and pepper. Add enough water or beef broth to just cover the meat or lentils, and stir to combine.
- Bring the mixture to a boil, then reduce the heat to low and let the stew simmer, covered, for at least 1 hour or until the meat (or lentils) are tender.
- If using, stir in the dried split peas and fenugreek leaves. Cover the pot and simmer for an additional 30 minutes or until the split peas are tender.
- Just before serving, stir in the saffron water and lemon juice. Taste and adjust the seasoning as needed.
- Serve hot with steamed basmati rice, pita bread, or lavash.
